Noodles
View Full Version : Noodles
I'm trying to make a noodle dish the same as a noodle bar
that I go to every week. I've cooked it a few times and I've
pretty much got the ingredients correct but I haven't got
much idea about what spices or sauces to add. Can someone
please tell me what they would most likely add? The
description on their menu is below. They cook the egg
seperately as a thin layer and roll it up. Would they add
anything to the egg?
This is my first post here so my apologies if this question
is not appropriate for this group.
Thanks, Michael Culley
Singapore fried noodle Vermicelli noodles stir fried with
shrimp, BBQ pork, egg, carrot, capsicum, onions, bean
shoots, spring onions and sesame oil.

What I've had as Singapore noodles in London always had
Chinese curry powder in them. That and a little soy sauce
should do.

Yeah, from all the recipes I looked at curry powder was in
all of them, which was one thing I didn't have.

Curry certainly - no oyster sauce. I have had Singapore
noodles in Singapore - they taste the same as the Singapore
noodles in San Francisco.

Why no oyster sauce?
