My wife has started riding again but finds her bike seat
extremely uncomfortable and complains it's causing soreness
in the sit-bone area. She also complains about the nose of
the saddle (no specific complaint other than wishing it
weren't there).

She's got an MTB with an old Performance gel seat.
Ultimately she really needs a "comfort" bike with seatpost
suspension but it's not in the cards this year.

In the meantime, I'm looking for recommendations for a good
beginner seat for a small woman who only rides occasionally.

The sit-bone soreness is typical for a new rider. That goes
away after a few days in the saddle.

I know a few women who like their Terry saddles. Women
specific, designed by a woman, blah blah. They have a
generous cut-out in the nose for those "soft tissues":

I have Terry saddles on my bikes and I love them.

Is the nose of her saddle a little high? This can cause
discomfort even with the cut-outs on the Terry saddles.

Different people have different width sit-bones. So the best
advice is for her to try different saddles and find one
where her sitbones fit on the saddle. Then look for the
narrowest saddle that supports her sit-bones. She might also
prefer one with a groove down the middle.

So go shopping.
