My reply is very late but still relevant since you are asking about a trip next year. May is very unpredictable. You'll see a lot of snow at high elevation but the if the roads are clear then you should be ok if it's sunny. The foothills of the Sierra-Nevada are nice as well if it's too cold/snowy up high.
