Recently I tried a degreaser on my chain and rear set. It didn't do much to help clean it (had a stiff brush and towel too)... but anyhow I managed to get a lot of degreaser over my rear rim. I just wiped it off, but for weeks now my rear brakes squeek loudly and don't seem to grip well... obviously it's the degreaser. What can I do to break that stuff down and get it off my rim? Dish detergent maybe?

Dish detergent, Simple Green, an orange/citrus cleaner, or if it really bugs you and seems really urgent, acetone. You might also want to clean the pads....or replace 'em.
I clean clients bike chains and gears with degreaser and a brush, hose off, then wash the whole bike with dish washing liquid and hot water using a sponge and rinse off. I let dry in the sun then spray where needed with CRC or WD40 then re lube cables and other moving parts.
The rims, if they need special attention, I use some metho on a clean rag. Occasionally the brake pads (MTB) need re-dressing with a fine flat file.
