We seem to have been in a similar situation. My college roomate last year had a Bianchi San Mateo, having absoultely no desire to cycle before hand, he eventually rubbed of on me and convinced me to join the college team. So naturally I initially gravitated toward a Bianchi, but found that their current offerings were not that appealing. If you are deadset on a Bianchi, check out the 1885 Veloce equppied model ($1900).
However, my hands down suggestion for you would be a Cannondale CAAD9, which you can find for around $1700. While this frame doesn't recieve all of the press that Cannondale's newer System Six/Super Six does, it still remains one of the best aluminum frames of all time. I'm sure anyone can tell you here that it is a racing beast. In any case, good luck!
