I have a wide, short foot with a high instep and wear Sidi Dominator 5 Mega. I'm looking for a pair of shoes for touring and I see Lake makes shoes in Wide width and the Lake MX101 looks like it may be what I'm looking for.

Can anyone here compare the volume of the Sidi Mega and Lake Wide?

I can't compare the two since I have never worn the SIDI... However, I have big wide feet, and I ride with the Lake MX-101 and I like them.

For daily walking shoes, if it is any good for comparison, I tend to wear Reebok DMX Wide width shoes.

i think shimano offers tailored custom fitting on one of their's shoes model

I have a wide, short foot with a high instep and wear Sidi Dominator 5 Mega.
Can't say anything about the Lake and Sidi, but Northwaves run wide, probably a true E or EE width. The insteps are low, as are those on nearly all stock cycling shoes, but you might be able to accommodate that with Specialized +2 or +3 insoles in just about any shoe.
