Thats why I asked the question.
Alcohol wipes out your resistance : and given that I have been avoiding alcohol and eating correct foods..........there should be no reason why I pick up these colds as regularly as I do.

Well, I was thinking alcohol. My brother died after a long episode like this, and I found that the real situation was alcohol.
A lot of people are boozing it up something fierce. And then blame it all on this or that illness, disease, condition, etc. But it's the booze.
But you say you don't drink much.
Then you have to look at environment (mold, fungus, allergies to something), diet, and nutrition.
Sugar. Could be sugar.
Tests. There are many tests, and it costs money. But if you find it.
Voila

Alcohol intake would be minimal : I had two pints last month.
Prior to that I hadn't any alcohol for 4 months.
I'm an infrequent drinker and it gets more infrequent as I get older.

Sugar intake? I rarely eat sweets or chocolate : processed sugars might be a factor in food though.

Got over an eight day cold, mid-last week.

I was going to say do you work at the airport. They seem to harbor every disease or infection passing thru any area.
It says, in the bar. You work in a bar? Is there smoking there, they say second hand smoke is worse than first hand, and it will weaken your immune system.
It seems like you may just have a poor immune system.
Doesn't the doctor want to do all kinds of tests on you? That may reveal some problem somewhere.
Anyway, it's not unusual that people have medical problems for years, and more than one doctor can't find it or identify it. The patient must do a lot of research, and try to find the situation.

Lim, are you sure they tested your immune function?

Go back and ask your GP if you are not sure - because from what you are describing it certainly sounds like your immune system is not doing its job and I would expect something to show up.

In fairness, it's been a couple of years since I underwent a battery of tests.
And those tests proved negative.

I spoke to the doctor subsequently : and he suggested that the only effective way to stave off colds/flu was to take 1000mgs of vitamin C per day.
I take Rubex (vitamin C tablet) each day, religiously.
But two three times per year - I still manage to get knocked out
with these heavy colds/flus.

I think I'll book an appointment with the doctor again.

3 things come to mind.
Climate. You live in Eire. Cold & damp. This is why we don't live in England. Or north east or north usa. But southwest usa.
Warm and dry climate. Better for the respiratory system, if there is not too much dust.
Parasites. They usually are picked up on the African continent, but can come from Europe.
Many times people think they have flu, but it's food poisoning/bad food. The symptoms are similar. Or they are carrying a parasite.
Emotions. Have you been worrying a lot. Or are you generally always happy.
Lastly, these flus are worse. In 1918 they killed 20 million. In 2003 I had one, worst ever. I came within a hair of dying.
But it could be a combination of factors.

FWIW I take vitamin D3 especially in the fall and winter. The flu epidmics of the past are all related to reduced sunlight for people above 30 degrees latitude in the fall and winter months. The epidemics that occurred below 30 degrees latitude were during the rainy season. The reccomended daily allowance for vitamin D was intended to prevent rickets it takes more to prevent the flu. It reins in your immune system so you don't drowned in your own mucus. When you are low in vitamin D your immune system over shoots creates to much mucus and that is how people die from the flu. It is very difficult if not impossible to get optimum vitamin D through diet it has to be supplements or sunlight or tanning bed.
