Depending on what kind of triple crank you now have, you may or may not get a taller top gear than what you have now by going to a double, especially if it is a compact double. In the last three years quite a few bikes have gone to a 50/39/30 for their triple rather than the previously more common 53/39/30 or 52/42/30. The 50 tooth largest chainring, whether on a compact or a triple, teamed up with a smallest cassette cog of 11 is a tall enough top gear for most of us recreational riders and comparable to a 53x12 combination, while a 50x12 is a bit of a penalty. Stronger riders prefer the 53x11 with a standard double. SRAM has had the 11-28 cassette for a few years and Shimano has one this year. It is a great option with a compact crank or a 50/39/30 triple for those (like me) who need the lower gears. Stronger riders than I can benefit from the better shifting of a tighter cassette matched with the standard or compact double crankset.

It sounds like you need to work on spinning (86 rpm minimum.) unless this speed is only in sprints- I've hit 30, and held it in a 39X15, faster in my top gear which I very seldom use and then ONLY in sprints and only when in top shape. I can "hold" fastest speeds in my 53X15 or lower- I'm not world or national class so I have no business even trying to use my "top" gears, that is a very, very good way to hurt yourself. All of the national coaches, pros ande expert rider's I've known agree that speed comes from "Fanning" the pedals/"spinning" the feet. You should NOT use a gear you can't spin, except for "power" training and do that no more than maybe once a week.

I completely agree with the previous post by pat5319. Proper cadence is I think one of the most important concept in cycling. I would never be in my tallest gear in the flats; leave that for the pro sprinters. Pick the proper gear to keep the feet spinning. You do need the bigger gears to have some pedal left for those 40+ mph downhills, though.

Proper cadence, yes, although the correct optimal cadence for each rider varies from rider to rider and is dependant on a whole raft of factors. There is no single magical number of RPM that will suit all riders.

Find a cadence that is comfortable for you, and that you can maintain, but not one that is so slow that you're labouring, or so high that you've got a good dose of saddle slapping going on.

Saddle slapping sounds like something NZedlians do, down in the Shire, when Mum's out knitting with the girls.

Otherwise......what Taniwhoop said.

No, it's not quite what you envisage, I suspect that you're thinking Bonanza type activities with Hoss, but here, in The Antipodes, we are pure in thought and action. None of your strange western type perversions for us.

Did you catch a set of spurmarks from playing "Giddy Up"?

No. No. No. That sort of play would be inappropriate. Instead, we used rubber spurs and mink riding crops.
