Smile Setting Goals for Alps trip

Background:
I'm new to cycling, but I have the opportunity to spend a week in June 2005 cycling in the Alps . I've set myself a long term "training" goal to cycle 20km's up an 8% gradient at 7kph.

I plan to train for ENDURANCE, CLIMBING and SPEED.

My Endurance goal is a 160km ride. I'm currently on 45km, and increasing by 10% each week. (not started on speed yet but my average is 30kph and its quite flat)

Questions:
1) What weekly goals should I set for improving my climbing?
(The three elements I guess are my cadence, gear selection and duration of the climb. However I'm not certain how to change or improve each on a week by week basis)?

2)I have similar question about improving my speed? I suspect it will be using intervals, but I don't know how to set weekly targets.

Your help will be much appreciated
