I use the varying speed tactic, allow it to think it is catching you then burn rubber, slow down again and repeat. The dog will give up fairly quickly and you remain in control of your bike safely.

I've actually done this many times and it works. I've also tried it with cars but it does'nt seem to work as well

I would definitely go with the pepper spray. I've been sprayed with it before and it sure as hell HURTS!! I remember seeing some once before that was a foam type with blue dye. Now wouldn't that be grand if the dog came limping home to its owner with it's face dyed blue?
