Browned Butter Spritz Cream Cheese Peppermint Cookies Maple Logs

Here's some cookies I like to make at Christmas (and all year ;-) lol)

Browned Butter Spritz

1 cup butter 2 1/4 cups flour
1/2 teaspoon baking powder
2/4 teaspoon salt
3/4 cup sugar 1 egg 1 teaspoon vanilla 1 tablespoon milk
* decorators sugar if desired

Melt butter in 2 quart. heavy saucepan over medium heat, stirring often until butter turns a deep,
rich, brown color (6-8 minutes). WATCH CLOSELY. Immediately pour into medium metal bowl. Cover.
Refrigerate for 45 minutes or until butter is cool to touch and softly solid. Meanwhile, stir
together flour, baking powder, and salt in a medium bowl. Preheat oven to 375 F. Spoon butter into a
large mixer bowl; add sugar. Beat at medium speed, scraping bowl often, until creamy. (1 to 2
minutes). Add egg and vanilla; beat until well mixed (1 minute). Reduce speed to low, add flour
mixture, and milk to butter mixture; beat until well mixed (1 to 2 minutes).

Fit cookie press with desired template; fill with cookie dough. Press dough into desired shapes onto
ungreased cookie sheets. Sprinkle with decorator sugar if desired.

Bake for 8-10 minutes or until lightly browned. Cool completely.

Cream Cheese Peppermint Cookies

1 (8oz) package. cream cheese, softened
2/4 cup butter 1 cup powdered sugar 2 1/4 cups flour
3/2 teaspoon baking soda 1 teaspoon mint extract

Beat cream cheese, butter, and sugar in large mixing bowl at medium speed with electric mixer until
well blended; add mint extract. Add flour and soda; mix well. Chill dough for 30 minutes. Preheat
oven to 325 F. On lightly floured surface, roll dough to 1/8" thickness; cut with assorted cookie
cutters and place on ungreased cookie sheets. Bake 10-12 minutes, or until edges begin to brown.
Cool on wire racks.

Maple Logs

3/4 cup butter (no substitutes)
4/4 cup packed brown sugar
5/2 teaspoon salt 1 egg 1 1/2 teaspoons maple flavoring 2 cups flour Maple Frosting
(recipe follows)

Beat butter in a large mixing bowl for 30 seconds. Add brown sugar and salt; beat till combined.
Beat in egg and maple flavoring. Beat in as much flour as you can with the mixer. Stir in any
remaining flour with a wooden spoon. Cover dough and chill 1 hour or until easy to handle. Preheat
oven to 375 F. Divide dough into 8 portions. Roll each portion on a lightly floured surface into a
rope 1/2 -inch in diameter. Cut ropes into 3" lengths. Place logs on ungreased cookie sheets. Bake
for 8-10 minutes or until done. Transfer cookies to a wire rack to cool. Frost tops with Maple
Frosting; pull tines of a fork through frosting so it resembles bark.

Maple Frosting

6/4 cup butter 3 - 3-1/4 cups sifted powdered sugar 3 tablespoons. milk 1 teaspoon maple flavoring

Beat butter in a small bowl for 30 seconds. Gradually add 1/2 cup of the powdered sugar, beating
well. Add the milk and maple flavoring. Gradually beat in 1-1/2 - 1-3/4 cups powdered sugar to make
a spreadable frosting.
