Default Advice on BikeE Brakes Requested

I have a BikeE AT with fat tires (Maxxis Hook Worm 20x1.95 and 16x1.95). The tires are great; the problem is that they are wide enough that the quick release feature on the brakes does not allow one to pull the tire though in the event of a flat. Any suggestions as to what brand of brake to purchase that will allow me the benefits of the Maxxis tires, and yet still have easy ability to remove the wheel in the event of a flat? Thank you!
