407 watts- 30 minute actual power

I only started serious cycling/racing less than a year ago, just upgraded to cat. 2. I was doing another sport before that.

...racing Expert now.

Would like to start road racing as well, but would I be labeled a sandbagger in Cat 5? (...from what I understand its mandatory to start in Cat 5?)

500W @79kg puts you around Miguel Indurain stats or virtually at the top of the international pro rating for FTP (6.40 w/kg). Johan could use you right now.

For what its worth I've based my numbers on the following chart provided by cycleops. Note the power curve @ 29 mph for the Fluid 2 (by the way that's an 8-speed ultegra in the highest gear at a cadence of 85)

And yes it may not be as pure of a number as an SRM or similiar meter (which I currently cannot afford), but it's in the ballpark. Admittedly even if it errors on the high side by 50 watts, they're unbelievable numbers for a non-pro. But I've seen the progress, last year at this time I could barely hold my current FTP for a minute. What did I do? Followed Dave Morris's plan...

Yep, they'd call you a sandbagger in the 5's with numbers like that, but so what. You've got no choice about the category you start in and you're only sandbagging if you avoid your upgrades when you've earned the points. Being strong doesn't make you a sandbagger, being strong, consistently winning and refusing to upgrade does

yes Miguel Indurain was quite reliably reported in the 505-515W range at around 80kg bodymass. That was for his hour record time .. so definitely FTP :-)
