Salmon with Tarragon Butter

My supermarket sells salmon with little balls of tarragon butter. You
broil the salmon in the butter. I makes great salmon. I would really
appreciate a recipe for this. Thankyou

Fish Steaks with Lemon Tarragon Butter

3 cup frozen green peas
1/2 cup sliced green onions
2 Tbsp. margarine or butter, softened
2 Tbsp. chopped fresh parsley
1 tsp. grated lemon peel
1 tsp. dried tarragon
1/2 tsp. salt
1/4 tsp. coarsely ground pepper
6 halibut or swordfish steaks, to 1 inch thick

Preheat oven to 450 F. or grill to medium-high. If using a foil bag to cook
the fish, sprinkle peas and onion in the bag and layer evenly.
Combine margarine, parsley, lemon peel, tarragon, salt and pepper and spread
over one side of fish steaks. Arrange fish on top of vegetables in foil bag.
Place foil in a 1-inch pan. Foil package may be cooked on the grill or in
the oven. Bake 30 to 35 minutes or grill 14 to 16 minutes.

If using conventional baking dish. Cook fish following the same directions
but use a lid with the dish.


Tarragon Butter
1/2 cup unsalted butter
1 1/2 teaspoons lemon juice
1 tablespoon dried tarragon
1 teaspoon freshly ground black pepper
2 tablespoons minced shallots
salt to taste
In a small bowl, cream butter with an electric mixer. Mix in lemon juice,
tarragon, black pepper, and shallot. Season to taste with salt. Chill for at
least 1 hour.

JAMES BEARD'S TARRAGON BUTTER

One and one-half teaspoons crushed dried tarragon or 2 tablespoons chopped
fresh tarragon
6 tablespoons butter, at room temperature
1 teaspoon salt
One-half teaspoon freshly ground pepper

Combine all ingredients. Put the mixture in the center of a large square of
waxed paper and carefully roll into a log. Wrap, and either chill or freeze.
