Smoking vs. Barbecuing

Okay, I know what grilling is (usually steaks, hamburgers, hot dogs and
chicken). I know what smoking is (usually salmon at our house).

How is barbecuing different than smoking? Is one a subset of the other?

Smoking is infusion of smoke, either cold or hot. It doesn't
necessarily have to have anything to do with barbeque, but true southern
barbeque always involves cooking with real wood or real wood charcoal,
so smoking is inherent in barbeque.

I keep forgetting about cold smoking. I had a sample of cold smoked salmon
at Sam's Club once, and as much as I tried to be polite, I just couldn't
keep that nasty stuff in my mouth. I do like smoked cheeses, though.

This is gonna be true Minnesota barbecue. ;) We use lump charcoal and
hickory, mostly.

Dams, true southern BBQ doesn't use any kind of lump to start; you make your
own by using wood. When the wood burns down, you make your own coals again.
It requires much more work because you have to constantly tend it. The
flavor is absolutely out of this world, though. TFM cooked some chickens
and a butt this way in Tennessee and it was some of the best food he's
cooked to date. I swear, one of the reasons we're thinking about moving
back up there is so we can have a firepit for the coals, a real BBQ and lots
of wood to stoke it with!

Yeah, but we're making true southern *Minnesota* barbecue! We use lump.
<EG> Seriously, we don't have enough good smoking wood to do it TFM's way,
so we have to supplement what we have with charcoal. I doubt that the
flavor of the meat would be enhanced by the use of box elder wood. :(

That'd be cool if you could get away from where you are and find yourselves
a little chunk of God's Country. I know you'd be happier.

I'm taking pictures of this little adventure and will post a link this
evening. :)

I haven't followed the whole thread -- did you do it? I've just posted
pics of our dinner at Market BBQ last night -- brisket for me, ribs for
the guys. The brisket was good - $14 for several slices. Rack of ribs
is $22.50+$3 splitting charge.

Crash isn't feeling up to it. He's in a lot of pain and didn't get much
sleep. I have had *no* sleep. Pulled a lot of key muscles helping Crash.
We're planning on doing the brisket tomorrow. I'll be really upset if we
wind up having to do it in the oven, but Crash just isn't doing too well.

Sounds like you had a kick-ass dinner! Good for you!

To me, smoking is a long slow process in an enclosed environment. Q'ing is a
slightly more rapid cooking process using a fuel that may or may not produce
smoke.

for him?

AC sawing logs.
