Won-ton Soup

1 cup chopped pork, not too lean
1/2 cup minced shelled shrimp
1 teaspoon light brown sugar
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon light soy sauce
1 teaspoon minced scallions
1 teaspoon minced fresh ginger root
24 ready made won-ton wrappers
3 cups stock
1 tablespoon light soy sauce
Finely chopped scallions, to garnish

In a bowl, thoroughly mix the chopped pork and shrimp with the sugar, rice
wine or sherry, soy sauce, scallions and ginger; set aside for 25 to 30
minutes for the flavors to blend. Place about 1 teaspoon of the pork
mixture in the center of each won-ton wrapper. Wet the edges of each
filled won-ton wrapper with a little water and press them together with
your fingers to seal. Fold each won-ton bundle over. To cook, bring the
stock to a rolling boil in a wok. Add the won-tons and boil for 5 minutes.
Season with the soy sauce and add the scallions. Transfer to individual
soup bowls and serve piping hot. Won-ton soup is served as a snack, dim
sum, or soup course. Serves 4.
