Rita is my neighbor, and this is an excellent cake!
Ritas Mothers Rhubarb Cake
Preheat oven to 350F
1/2 cup margarine or butter
1 1/2 cup sugar
1 tsp vanilla
1 cup soured milk (1 cup milk soured with 1 tsp lemon juice)
2 cup flour
1 tsp baking soda
1/2 tsp baking powder
about 3 cup finely chopped rhubarb
Cream butter and sugar together, and add the vanilla to it. Mix flour
with soda and baking powder. Alternately add the soured milk and the
flour mixture to the butter/sugar mixture. Add rhubarb and mix, but do
not over mix. Butter a 9x13 pan, and flour the bottom lightly. Place the
fruit mixture into the pan. Top with a lightly crumbed mixture of:
1/2 cup brown sugar
1 1/2 tsp cinnamon
1 1/2 tsp margarine or butter
Bake for 45 55 minutes.
Optional: Toss some toasted pecans into the crumb mixture.
