Scandinavian Beef Salad

3 large boiled potatoes,peeled and cubed
1 lb cooked beef,cubed
3/4 lb pickled herring,cubed
1 cup chopped pickled beets
1/2 cup chopped red onion
1 cup baby dill pickles,chopped
1 cup sour cream
3/4 cup mayonnaise
3 tsp red wine vinegar
1 tsp Dijon mustard
3 Tbsp chopped fresh dill

Gently combine potatoes, beef, herring, beets, onion and baby dill pickles in
large salad bowl. In small bowl, whisk together sour cream, mayonnaise, red wine
vinegar and mustard. Pour over salad and toss gently.Place in fridge for at least
1 hour. Serve chilled,sprinkled with dill.
Serves 6
