Started throwing things together New Year's Day, and this resulted. We loved it! Have tried it w/
black beans, too, which was also very tasty, but prefer the black-eyed peas.

Quick Start Black-Eyed Pea Soup

2 cans black eyed peas 1 med onion, chopped 1-2 large cloves garlic- chopped 2 Tbsp olive oil 1 cup
smoked ham pieces- chopped into bite size 1 can Rotel Tomatoes and chilies 1 1/2 cup water
1/2 tsp Cavender's Greek Seasoning Season to taste with salt and freshly ground pepper

In soup pot, sauti onion in olive oil until tender, then add garlic and saute briefly. Add all other
ingredients and bring to slow simmer. Cook for 10 minutes. Great served with french bread!
