Default Comparing Bicycles

How can I compare the relative performance of bikes with different
wheel sizes and gear ratios? I am particularly interested in
estimating how my existing 21 speed 27" wheel hybrid would compare to
various 20" wheel 7 speed configurations found in folding bikes and
some of the new comfort bikes.
