Apple-Cheese Cookies

Apple-Cheese Cookies

(From Quaker Oats Whole-Grain Cookbook, published in and clipped from a
newspaper)

3/4 cup all-purpose flour
2/3 cup butter or margarine, softened
1/3 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups oats, quick or old-fashioned, uncooked
1 cup cheddar cheese, grated (reduced-fat sharp cheddar worked well)
3/4 cup raisens
1 cup chopped apple

-Preheat oven to 375 degrees. Combine flour, butter, sugar, egg, vanilla,
cinnamon, baking powder and salt in large bowl and mix well. Add oats,
cheese and raisens and mix well. Stir in apple. Drop heaping
tablespoonfuls onto ungreased cookie sheet; bake 15 minutes or until
golden brown. Store in tightly covered container in refrigerator or in
loosely covered container at room temperature.
-Makes about 2 dozen cookies. Note: The dough is kind of crumbly when
dropping onto the baking sheet, I often have to help shape them together,
but it all works out.
-Published serving suggestion said to try with a red wine.
