Question What upgrades? Brakes, Rotors, Saddle etc

Hi,

I have a Cannondale F800 with Lefty Jake, Hayes FX-9 Hydraulic disc brakes (160 rotors), LX Shifters, LX Front Derailleur and XT Rear Derailleur, Fi'zi:k Xenon saddle and Panaracer Fire XC PRO tyres on Mavic XM117Disc Rims.

I'm going to upgrade quite a lot of this and wanted some advice before I did:

I am upgrading the brakes to Hope Mono Minis. Anything else I should look at before I do and also what size rotors (I was thinking 180 on front and 160 on back)? Floating Rotors?

I want to upgrade the saddle as this one is really really bad! I used to have a lovely Selle Italia but they no longer do it. What do you suggest?

I need to start thinking about weight loss. Where should I start?

What else?
