After descending a hill yesterday, I checked my max speed to see how fast I went, only to find this crazy number. Anyone know what phenomenon could cause this?

I presume you've been using this device for a while and the wheel circumference is correct. I see it's wireless. Possibly some interference? I know when I pass an 'invisible fence' on a property my heart rate 'jumps' to 240+!!!

Where I ride, TV towers, aeroport radar and train overhead power cables all can cause it.

My wireless Shimano Flight Deck had an average speed of 130 MPH on a ride that I did between Springfield and Urbana in Ohio. We rode past a radio tower and an electrical substation where I'm sure that there were a lot of homeless radio waves floating around. 130 MPH was a bit much, I doubt that I got much over 100, except maybe on the downhills
. (Pity there is not Smilie for "Tongue in cheek".)

I think all the typical cyclometers that use a leaf switch and a magnet are susceptible to this.
I wonder if Avocets are. They use a different design that has a ring all the way around the outside of the hub.
