I am guessing that they are "SPD-style" pedals, whose cleats have two horizontal bolt holes?
SPD cleats come in a pack that includes the cleat body, two screws, and a cover plate to make the cleat/screw interface perfectly flush. Basically what you do is get the cleat, put the cover plate into the recess provided for it (there is a "right way up" for both the cleat and the cover plate), thread the screws through the two holes, and bolt it to the shoe securely. You don't want the cleat coming loose, trust me.. The recess provided for the cover plate is usually a little larger than what's strictly necessary, so you can make fine adjustments to the positioning of the cleat on the shoe. MTB shoes will usually have 2 or 4 holes, or might have holes on a plate that can slide up and down inside the sole.. the purpose of this is to fine-tune the fore-aft position of the cleat. (A good starting point is to have it at about where the ball of your foot is, and adjust from there until you find the most comfortable spot.)

All sounds good to me. To help with security, I suggest you coat the threads of the screws with BLUE loctite. It will help in preventing rust as well.

Use the Bontager cleats supplied with the pedals and when you replace the cleats make sure that you buy Bontager cleats.
