Chicken Souvlaki

    Chicken Souvlaki

    2 lbs.. chicken breasts
    1 tsp Oregano
    1 tsp Rosemary
    Juice of 1 lemon
    3 cloves Garlic, crushed
    1/4 cup White wine
    1/4 cup Olive oil
    Salt & pepper

    Tzadziki
    8 oz Plain yogurt
    1 Sm cucumber, shredded
    1/4 cup Olive oil
    1 1/2 tsp White vinegar
    Salt to taste, parsley for garnish

    Cube chicken breasts. Mix spices, lemon juice, garlic, wine, olive oil,
    salt & pepper. Pour over chicken pieces, marinate no less than 1 hr.
    Skewer 6-7 pieces, grill or broil 15 on each side. Baste often during
    cooking.

    Tzadziki
    Line a strainer w/a coffee filter, place yogurt in strainer and allow to
    drain 3-4 hrs. peel, seed and grate the cucumber. Drain on towels. Combine
    all ingredients in a bowl and mix well. Refrigerate before serving.
