I can get a Devinci bike with aluminum frame, carbon fork, carbon rear stay (I think it is called? I'm new at this!) with 105 components for $1300 Canadian. I can also buy a Specialized Roubaix with carbon frame, carbon fork and carbon rear stay with 105's for $1800. Is it worth the extra $500 to have a carbon frame?

I wouldn't spend the extra $500 for that particular carbon frame. If you're a newer cyclist, the aluminum/carbon frame should be a good starting point.

    ...just my $.02.

No. Spend the money on a second set(second hand is fine - if they're in good condition) of wheels for racing on:)
