725 vs. 853

853 is the tubeset made specifically for tig wleding, w/o lugs, in that
the joints get stronger with welding instead of weaker. Your '853'
bicycle probably has something else in the rear triangle, like 753 or
725..

You will notice nothing, 853 is thinner so I would say use the 725 as
it's thicker walled..'maybe' better for you at 210lbs. BUT the
builder's build is more important than the tubing.

725 could be thicker than 853, but it doesn't have to be: there are many
tubing options. For a given size 853 takes a bigger knock before it dents.
BTW the head and seattube will be something else as brazed 853 kills
reamers pretty quick.
