  1. This recipe came from a neighbor when we lived in Ohio. We usually make the suggested buttercream
    and coat the outside with additional chopped black walnuts.

    In my neighbor's family, this was always served at Christmas.

    Black Walnut Cake

    Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Cakes Desserts

    Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
    2 c Sifted flour 2 3/4 ts Baking powder
    1/4 ts Salt
    2/3 c Shortening 1 1/2 c Sugar 1 t Vanilla 3 ea Eggs - separated
    3/4 c Milk 1 1/2 c Black walnuts
    - coarsely chopped

    Sift flour, baking powder, and salt together. Cream shortening with sugar and vanilla until
    fluffy. Add beaten egg yolks and beat thoroughly. Add sifted dry ingredients and milk alternately
    in small amounts. Add nuts and fold in stiffly beaten egg whites. Pour into greased pans and bake
    in moderate oven of 350 degrees F. for 30 minutes. Makes 2 8" layers.

    (My note: May be filled and frosted with vanilla buttercream, or buttercream flavored with black
    walnut extract, and sprinkled with chopped black walnuts.)
