All-Bran Banana Bread

The addition of All-Bran breakfast cereal to this Banana Bread recipe,
makes for a healthier bread with a richer taste and spongier texture

3 large bananas (approx)
2 eggs
2 cups All-Bran cereal
2 cups flour
3/4 cup granulated sugar
1/2 cup butter or shortening
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Preheat oven to 350F (180C) Peel and mash the bananas, you need to end up
with 1 1/2 cups. If you have too little add another banana, too much then
don't use all the banana. Soften the butter/shortening Break the eggs into
a bowl and beat well. Sift together the flour, baking powder, soda and salt.
Combine the All-Bran and mashed bananas in a separate bowl and let this
mixture stand for approx 5 minutes. Cream the butter and sugar together,
fold in the eggs and then the banana/cerealmixture. Beat well. Stir in the
sifted flour and mix until the flour is evenly distributed through the
mixture. Grease a 9X5X3" loaf pan and spoon in the mixture. Place in the
preheated oven and bake the banana bread for 60 minutes. It is done when a
toothpick inserted in the middle comes out clean. Remove the banana
breadfrom the oven and allow to cool slightly in the loaf tin. Turn out
onto a rack to complete cooling. Slice and serve the banana bread buttered
or with honey.
