This recipe compliments both chicken and pork. It has a nice depth of
flavour. While it is meant for canning you can divide down the recipe
to make a jar or two for short term storage in the fridge. Enjoy 🙂
4 lb cooking apples
1 lemon
1 clove garlic [crushed]
2 1/4 c brown sugar
1 1/2 c seedless raisens
3/4 c crystallized ginger
1 1/2 tsp salt
1/4 tsp cayenne pepper
2 c cider vinegar
Wash, peel, core and chop apples. Wash, seed and chop lemon. In large
kettle combine all ingredients. Simmer mixture uncovered for about 2
hrs. Ladle into hot jars and seal.
Yield: 6 - 250 ml jars
