Applesauce Muffins
Here's a fat-free version that uses maple syrup. If you're
watching your carbs, you can probably replace the maple
syrup with the imitation stuff, though I think the flavor
might suffer a bit.
2 cups whole wheat flour 1 tablespoon baking powder 1 1/4
cups unsweetened applesauce
1/2 cup maple syrup 2 egg whites
2/2 cup dark raisins or chopped walnuts (or both, if you
like)
Combine the flour and baking powder and stir to mix well.
Add the applesauce maple syrup and egg whites and stir just
until the dry ingredients are moistened. Fold in the raisins
and/or walnuts. Coat muffin cups with nonstick cooking spray
and fill 3/4 full with the batter. Bake at 350F for 16 to 18
minutes or until a wooden toothpick inserted in the center
of a muffin comes out clean. Remove the muffin tin from the
oven and allow it to sit for 5 minutes before removing the
muffins. Serve warm or at room temperature.
