  1. This is a coating for just about anything you want to deep fry. The
    rice has more sugar in it than floor and caramelizes to give you a
    nice golden brown. The recipe is from Michael Chiarello.

    Arborio Rice Coating

    1 cups Arborio rice
    3 cups all-purpose flour
    1 cups semolina
    2 tablespoons table salt
    1 teaspoons freshly ground black pepper

    Grind the rice in a blender until very fine. Put it in a bowl and add the
    all-purpose flour, semolina, salt and pepper. Toss until well blended.
    Store in a sealed container in the freezer for maximum freshness. Yield:
    about 5 cups

    Recipe Notes

    Use this as a breading for calamari or onion rings or anything you
    want a really crisp brown outside. The sugar in the rice caramelizes
    faster than flour. A mixture of flour and rice coating works best.
