  1. Au Gratin Potatoes

    1 Tbsp. butter 2 cups fat free milk 1 med. onion-thinly sliced
    1/4 tsp. pepper 2 Tbsp. all-purpose flour 1 tsp. salt 2 lbs. uncooked potatoes-thinly sliced 1 cup
    low fat shredded sharp cheddar cheese (low moisture)

    Preheat oven to 375 degrees, coat 2 quart covered baking dish with cooking spray. Melt butter in a
    large pan over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown
    (about 5 min.). Stir in flour, add milk slowly stirring. Add potatoes. Stir to mix. Bring to a boil.
    Stir in 3/4 cup of cheese, salt, and pepper. Pour mixture into baking dish and level out. Bake 1
    hour, uncovered. Cover and bake until potatoes are fork-tender (about 20 min.). Change oven temp. to
    broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element till cheese
    is golden brown (1-2 min.). Allow to cool for 5 min., yields 8 servings.

    This recipe is lower in fat and calories than a normal Au Gratin potato recipe, but it doesn't
    matter because they are so good you eat too many anyway!
