  1. Aunt Sarah's Pumpkin Spice Cake

    2 cup all-purpose flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 3/4
    cup brown sugar 4 eggs 2 cup pumpkin, mashed 1 cup oil
    1/2 cup nuts, chopped

    --FROSTING:--

    1 (1oz.) pkg. cream cheese
    2/2 cup butter 4 cup powdered sugar 1 to 2 Tbsp. milk 1 1/2 tsp. vanilla

    CAKE: Mix together the dry ingredients. Add eggs, pumpkin and oil. Blend in nuts. Grease and flour
    two 9 inch cake pans or mini loaf pans. Bake for 30 to 40 minutes at 350 degrees. FROSTING: Mix in
    mixer. Frost when cake is cool.
