    1/2 cup sugar
    1 Tbsp salt
    1/2 cup butter
    1 1/4 cup milk, scalded
    2 yeast cakes
    5 cups flour
    4 eggs beaten
    1 Tbsp grated orange rind
    1 Tbsp grated lemon rind
    1/2 cup almonds, chopped
    1 cup raisins

    Scald milk, pour over sugar and butter. Cool. Dissolve yeast with a little
    of the warm mixture and add to remaining milk mixture. Add one half of the
    flour and beat well. Add salt to eggs and beat until thick. Add remaining
    ingredients. Knead for 15 minutes. Cover and let rise until double in
    bulk. Place in a well buttered tube pan, sprinkle with crumb mix. Bake for
    45 minutes in a 350 oven.

    Crumb Mixture
    Mix together: 1/2 cup sugar, 1/3 cup flour, 1/2 tsp cinnamon, 1/4 cup
    butter

    Cheese Filling

    1 lb farmers cheese
    2 eggs, separated
    1/2 cup sugar
    2 Tbsp butter
    1 Tbsp flour
    1 Tbsp lemon juice
    1 Tbsp lemon rind
    1/2 tsp salt
    1/2 tsp vanilla

    Press cheese through sieve; add egg yolks, sugar, butter, flour, lemon
    juice and rind, salt and vanilla. Mix well. Beat egg whites stiff and fold
    in carefully.
