  1. A nice little starter that can be cooked in an oven or on a
    BBQ.

    Baked Cod in a Bag

    2 Cod Fillets (1/2 per portion) 2 Garlic Cloves (1/2 per
    portion) 2 tablespoons of white wine per portion 1 Lemon 8 -
    10 small cherry tomatoes 4 Tablespoons wine Handful of
    chopped mixed herbs such as Basil, Parsley, Chives, Dill -
    Fresh if possible but if using dried, only use a teaspoons
    worth! Salt and Pepper Olive Oil

    Using silver foil, make 4 small boat-like structures - large
    enough for the edges to fold over half a-cod fillet. Cut
    each cod fillet into two and place into the foil parcel.
    Pour a tablespoon of wine over each portion. Crush the
    garlic and sprinkle evenly over each portion (roughly half a
    clove per fillet). Cut the lemon into quarters, squeeze each
    quarter over a fillet then add the squeezed wedge to the
    foil packet. Cut each cherry tomato in two, then squeeze
    slightly over the cod and then add to the foil parcel - 2 to
    3 tomatoes per portion. Sprinkle mixed herbs over each
    portion Add seasoning and a little dribble of oil. Finally,
    seal the package by folding the edges together - this is so
    when it cooks, the steam from the wine and cod juices cook
    the cod in the foil.

    I've cooked this on a barbecue for about 20 mins but is
    equally nice cooked in a 200 degrees (c) oven for about 15 -
    20 minutes or until the cod flakes nicely but still retains
    some moisture.

    Lovely served with a simple salad and some boiled, minted,
    new potatoes. The sauce from the foil parcel is very nice as
    a dressing for the salad.

    I also add a little butter with the wine, but this can be
    omitted for a low-fat option.
