  1. Banana Cream Cheese Pie

    1 pkg. (8-oz.) Cream Cheese, softened
    1/2 cup Sugar 2 to 3 medium Bananas, mashed, at least 1 cup
    1 tsp. Lemon Juice 1 (8-oz.) carton Cool Whip, thawed 1 9"
    Graham Cracker Crust

    In a bowl, beat cream cheese and sugar until smooth. Combine
    bananas and lemon juice; add to cream cheese mixture. Fold
    in cool whip. Pour into crust. Cover and refrigerate several
    hours before serving.

    footnote: I like to add a top layer of cool whip to pie and
    a little toasted coconut on top of cool whip. It is very
    easy to make especially if you learn company is coming at
    the last minute. This additional touch makes your pie look
    like you spent more time making it.
