  1. Beefed-Up-Biscuit Casserole

    1 1/2 lbs lean ground beef or turkey
    1 16 oz sour cream
    3 cups shredded cheddar cheese
    1 large can diced green chilis
    1 egg
    salt & pepper to taste
    2 pkgs flaky biscuits
    1/2 large yellow onion, diced

    Cook and drain groud beef or turkey. Return cooked meat to pan and add
    green chilis and onion. Cook until onions are transparent. Stir egg into
    sour cream and add to pan. Cook over medium heat for five minutes or
    until completely heated through and bubbling.

    Spray 9x13 pan with cooking spray. Open biscuits and split each in half
    with your fingers. Layer biscuits in bottom of pan. Layer in meat
    mixture. Top with the second can of biscuits, also split in half. Finish
    off with a thick layer of cheese and bake according to the biscuit
    directions.

    Serves eight.
