Bocconcini di Pollo con Pecorino Siciliano

  1. Bocconcini di Pollo con Pecorino Siciliano
    Chicken Morsels with Sicilian Pecorino

    1 lb. chicken breasts
    1 Tbsp. pine nuts
    1 Tbsp. chopped almonds
    1 Tbsp. raisins
    4 oz. grated Pecorino Siciliano cheese
    4 Tbsp. butter
    1/2 cup white wine
    3 oranges
    Fresh dill chopped
    Salt and pepper

    Cut the chicken breasts into bite size pieces. Lightly flour and then
    brown in a pan with the butter. Then add the pine nuts, the raisins and
    the juice of 2 oranges. Add salt and pepper to taste. Add the wine.
    When the morsels are almost done add the third orange sliced and the
    grated Pecorino Siciliano cheese.
    Toss and remove from the flame. Sprinkle with the almonds and minced

    Serve hot. Serves 4.
