Breakfast Cookies
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup butter (2 sticks) room temperature.
1 cup packed brown sugar
1 cup granulated sugar
2 eggs
1-1/2 teaspoons vanilla
1 cup quick-cooking rolled oats (not instant)
2 cups coarsely crushed Corn Flakes (you can use Bran
Flakes,
Total etc.)
1/2 cup flaked coconut
Other added options:
1/2 cup peanut butter
Chopped nuts
1/2 teaspoon cinnamon, cloves or allspice
Preheat oven to 350 degrees F. Lightly grease some cookie sheets. In a
large bowl sift together flour, baking soda, baking powder and salt. In
another large bowl, beat butter, brown sugar and granulated sugar with
an electric mixer until light and fluffy. Add eggs; beat well. Add
vanilla; beat to combine. Gradually stir flour mixture into the
butter-sugar mixture. Beat well. With a spoon, stir in rolled oats,
corn flakes and coconut. Drop by teaspoonsful onto prepared baking
sheets. The cookies should be about 2 inches apart. Bake 1 sheet at a
time until cookies are lightly browned, about 8 - 10 minutes. Remove to
a rack to cool.
Yield: About 5 Dozen cookies
