We had freeze warnings the other night so I picked about 85% of my
parsley and stuck it in a vase of water in the house.
Gloria and I hit our co-op on Sunday and I bought some bulgur with the
intent of tabbouleh sometime soon to use that parsley.
I soaked it last night (left it in the water overnight, in fact) and
this morning drained it. I chopped about 1/4 of the parsley I picked,
chopped maybe 8 green onions, half a cucumber, and two small tomatoes
and put it into a big bowl. I added the bulgur until it looked right
(used all the bulgur maybe 3/4 cup, soaked). I sprinkled on some (the
culinary measure) cumin, kosher salt; dressed it with the juice of half
a lemon and some olive oil. I ground some black pepper on it, too.
Dayam! It was good. I decided I should just eat it all so it wouldn't
get soggy and any wetter than it was. No bread involved, just a s poon.
Tasty, tasty, tasty.
