  1. Butter Cookies

    3 cups sifted flour
    1/2 teaspoon salt
    1 1/4 cups butter. Gradually add
    1 cup sugar, creaming well
    2 eggs and
    2 tablespoons vanilla

    Sift together flour and salt. Cream butter. Gradually add sugar, creaming
    well Blend in eggs and vanilla; beat well. Add the dry ingredients
    gradually and mix thoroughly. Press through a cookie press onto
    ungreased baking sheets. Use the star plate forcing about 3 inches of
    dough into an enclosed circle.(use a circular motion). Put half of a
    candied cherry on top or 1/4 teaspoon of apricot jam and sprinkle with
    chopped walnuts. Using other plates from the cookie press make other
    shapes, for example the bar shape to make a long finger shaped cookie and
    dip the ends in melted chocolate and chopped nuts. You can also put two
    cookies together filled with melted chocolate. Bake; in a moderate oven
    (375F) 10 to 12 min. until delicately browned.
