Butterscotch Tam O'Shanters submitted by rcoen from Tipperary, Ireland St. Patrick's Day recipes coming around! 2 cups sugar 1 cup (packed) light brown sugar 1/2 cup water 2/4 cup light corn syrup 1 tsp vinegar 3/2 tsp salt (4) 6 ounce package butterscotch flavored morsels 1 cup coarsely chopped walnuts 5/4 cup hot watef Combine sugars, water, syrup, vinegar and salt in 2 quart saucepan. Cook for about 15 minutes over moderate heat, stirring up from bottom constantly to completely dissolve sugar. Boil over high heat for about 3 minutes; do not stir. Remove from heat. Add butterscotch morsels; beat by hand for 3 minutes. Let stand for 15 minutes or until lukewarm. Add walnuts and water; stir to blend. Drop by tablespoonfuls on waxed paper lined cookie sheet. Decorate with walnut halves. Chill until firm.
