1 pound ground round
1/2 teaspoon garlic salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
2 celery stalks -- chopped
1 15 ounce can kidney beans, canned
1/2 medium cabbage head -- chopped
1 28 ounce can diced tomatoes, canned -- drained and liquid reserved
3 1/2 cups water
4 beef bouillon cubes
chopped fresh parsley
In a Dutch oven, brown beef until no longer pink. Add all remaining ingredients
except parsley; bring to a boil. Reduce heat and simmer, covered, for 1 hour.
Garnish with parsley.

6 large onions -- chopped
2 large carrots -- chopped
1 yellow squash -- chopped
2 tomatoes -- chopped
1 large cabbage head -- shredded
1 bunch celery -- chopped
1 package onion soup mix
Combine all ingredients in a large pot; fill with water until ingredients are
covered. Boil for 10 minutes. Cover, lower heat, and simmer until vegetables are
soft.

1 pound bulk sausage
3/4 teaspoon salt
3 cups water
1/2 teaspoon pepper
1 14 ounce can beef broth
1/4 teaspoon paprika
1 10 3/4 ounce can tomato soup, condensed
1 bay leaf
1 small head cabbage -- coarsely chopped
1 medium onion -- chopped
1 15 ounce can kidney beans, canned -- rinsed and drained
grated Parmesan cheese -- for garnish
Crumble and cook sausage in medium skillet until browned. Drain off any drippings.
Combine sausage and all remaining ingredients except beans and cheese in large
saucepan; bring to a boil over high heat. Reduce heat to low; cover and simmer 35
minutes or until cabbage is tender. Remove bay leaf. Add beans; cook until heated
through. Serve in individual soup bowls and garnish with Parmesan cheese if desired.
Refrigerate leftovers.

1 teaspoon vegetable oil
1 small onion -- finely chopped
4 garlic cloves -- minced
6 cups chicken broth
2 pounds shredded cabbage
3 medium carrots -- halved lengthwise and thinly sliced
2 medium tomatoes -- chopped
2 tablespoons tomato paste
1/3 cup chopped fresh dill
3 cups water
2 tablespoons red wine vinegar
1 1/2 teaspoons sugar
1/4 teaspoon salt
In a stockpot or 5 quart Dutch oven, heat the oil over low heat. Add the onion and
garlic and cook, stirring constantly for 2 minutes. Add 1/3 cup broth, cover and
cook for 5 minutes, stirring occasionally. Stir in the cabbage, remaining 5 2/3 cups
broth, carrots, tomatoes, tomato paste, dill, and water. Bring to a boil over medium
heat, adjust the heat so that the mixture simmers gently, cover, and cook for 35
minutes. Stir in the vinegar, sugar, and salt; cover and simmer 5 minutes more.
Yield: "12 cups"
