    Quebec Sugar Pie
    Traditional French-Canadian Sugar Pie

    Quebec Sugar Pie

    Makes 1 - 9 inch pie

    2 cups packed brown sugar
    1 cup heavy whipping cream
    1/2 cup chopped walnuts
    1 recipe pastry for a 9 inch single crust pie

    Line a 9 inch pie plate with pastry. Trim and flute, but
    do not prick bottom.
    Combine the brown sugar and cream in a small saucepan.
    Bring to a boil over low heat. Cook stirring slowly for
    10 minutes, or until thickened. Remove from heat, and stir
    in 1/2 chopped nuts. Cool. Pour filling into prepared pie shell.
    Bake at 375 degrees F (190 degrees C) for 30 to 35 minutes.
    Remove pie from oven, and cool. Filling will set when cold.

    Traditional French-Canadian Sugar Pie

    Makes 1 - 8 inch pie

    1 cup packed brown sugar
    1/2 cup heavy whipping cream
    1 tablespoon all-purpose flour

    Preheat oven to 400 degrees F (205 degrees C). Mix brown sugar, cream,
    and flour until smooth. Pour filling into pie crust Bake for 30
    minutes. Serve warm or cold.
