replacing the chain used on a 7 speed sachs screw-on freewheel. anybody know
if a 7/8 speed shimano/SRAM chain will do (looking for a cheapish one) or
whether i'll need something a bit more specialist?

The basic Sachs (PC48??) will work perfectly on 7-spd.

SRAM PC41 or PC58 from:
url:http://www.parker-international.co.uk/ProductsList/mcs/CategoryID/39/G
roupID/3/CatName/Cycle%20Chain/v/2da40dbe-59de-4f77-9ca1-a8b1cdb420b7
PC41 is black, 58 is half black/grey half silver. Both are suitable for 7
and 8sp systems. Add a Power Link.

SRAM PC48 is the basic 7/8sp black chain and will work absolutely fine.
I use one on a very expensive touring bike with XT kit.
