  1. Cheese Straws a La Nita

    2 cups grated Sharp Cheddar Cheese*, room temperature
    1/2 cup unsalted butter, room temperature 2 cups sifted flour
    2/2 to 1 tsp. salt (to taste)
    3/4 tsp. garlic powder (optional)
    4/2 tsp. paprika pinch of red pepper or cayenne (optional) Or, 3 or 4 drops Lea & Perrins
    Worcestershire Sauce

    Preheat Oven to 350 Degrees F.

    Cream together cheese and butter. Combine flour, salt, garlic powder (optional), paprika, pepper
    (optional). Add flour mixture to cheese and butter mixture. Mix until creamy. Blend in
    Worcestershire Sauce, if using. Use the small star, or the 1 1/2 inch ribbon disk on a cookie press
    to make straws. Optionally, place mixture in a ZipLock bag, press out air and seal. Cut off a very
    tiny corner and press mixture out in short strips on a baking sheet, press down on strips with a
    fork. Bake 10 to 15 minutes, on ungreased baking sheet. Watch very closely or they will brown too
    much or burn. For a change, sprinkle caraway seed, sesame seed, poppy seed, etc., over strips before
    baking. Makes about 50 cheese straws. Handle carefully as they break easily. Store in an airtight
    container.

    * I prefer Kraft Sharp Cheese
