  1. Chicken Afritada

    1 whole chicken (cut into serving pieces)
    4 to 6 pieces potatoes (peeled and cut into four)
    3/4 cup tomato sauce
    1 cup water
    1 pc. red or green bell pepper
    1/2 cup onions (chopped)
    Garlic (crushed)
    1/4 cup bread crumbs
    1 1/2 tsp. salt
    1/4 tsp. ground black pepper
    Cooking oil

    Heat oil in a pot. Add chicken and cook until light brown, remove
    from pot and set aside. With the remaining oil saute garlic and
    onions then add the tomato sauce and water. Let it boil, put the
    chicken back to the pot. Cook until the meat is tender. Add the
    potatoes and bell pepper. Simmer until the potatoes are cooked.
    Season with salt and pepper (you can add more salt and pepper
    depending on your taste). Thicken sauce with bread crumbs. Serve
    with rice.
