  1. Made this for dinner the other night, it turned out really good.

    Chicken and mushroom saute

    1 tablespoon olive oil
    4 1/4 pound skinless boneless chicken breasts
    1/2 pound fresh white mushrooms, sliced
    15 0z package fresh [censored] mushrooms, stems removed
    2 garlic cloves, sliced
    1 medium shallot,chopped
    1/2 teaspoon dried thyme
    1 1/2 cups reduced sodium chicken broth
    salt and pepper

    heat oil, cook chicken till browned , about three minutes on each
    side. Transfer to a plate and cook shallots mushroom and garlic,
    thyme, stirring till soft and golden, about 8 minutes.

    Add broth, chicken salt and pepper , put heat on medium low and simmer
    till chicken is cooked through, about 8 minutes.

    Transfer chicken to a serving plate, turn up heat and educe sauce till
    it is about 1 1/4 cups.

    Spoon mushroom mixture over the chicken and serve.

    I served this over Israeli couscous.

    Sounds good. I like mixing different kinds of mushrooms in a dish like
    this. It would also be good with those boneless pork cutlets,
    flattened. You wouldn't need to simmer them but a couple of minutes at
    the end, I think. -aem

    This is the kind of recipe that is easy to change and fool around
    with.
