    Cutlets by definition are already tender, nothing to do
    except season and cook... unless you mean *formed* cutlets,
    then you need a meat grinder.

    Just marinate the chicken in something slightly acidic for
    a few hours, or over night. I use a teaspoon of white
    vinegar in a cup of soy sauce with some herbs and spices.
    Works well.

  4. Do not overcook chicken, especially breast meat. It dries
    out and is tough. Cook just till the juices run clear and
    remove from the heat source. I even remove slightly before
    the juice is clear and let it finish for 5 to 7 minutes.

    To flatten, and to some tenderize, meat I use what used to
    be my hubby's dead blow mallet. (He had to get another one,
    I wouldn't give it back) -Ginny
